From vines that are about 20 years old, planted on rocky soils with the presence of calcium carbonate. This offers a very subtle look at the variety, rich in herbal notes, with ripe red fruits and a texture made from fine, sharp tannins that give life and show a juicy interpretation of mountain cabernet. From old vines in the Ebenezer district of the northern Barossa Valley, it offers classic notes of blackberries and spice, framed by hints of cedar and vanilla (it's aged in 100% new oak hogsheads, mostly French). It's full-bodied yet crisp, supple but tight and really long. Offering lovely dark fruit, hints of espresso and black olive, it finishes mouthwatering and firm. The palate is smooth - a feature of all of Dean's wines - but with a slightly saline edge, savoury intensity midway, and structural acidity. It's a colluvial stone from the Andes Mountains that has proven to be perfect for cabernet sauvignon (Domus and Cousiño Macul are the best examples of this classic area), and for Aquitania, it's the base of a wine that's always subtle, always delicate. If you like their interpretation of place in their emblematic Paul Bruno, this will amaze you. There's a depth of sweet red-fruit flavors here and herbal aromas that mingle with earthy and spicy tones, while tannins roll smoothly through the mouth, as if walking on spongy soles. The palate is full of flavor, but not to excess, and the acidity is just right. A classic to understand the true character of Chile's historic cabernet. [Drink till 2034.] Score - 96. Juicy, bright and clean, this stands out with mouthwatering acidity underpinning a sleek core of well-defined creamy and chalky fruits - blackcurrant, plum and blueberry with lots of fragrance, too; you really get the Cabernet Franc speaking here. There is tons of salinity as well as oak aspects in the clove, cinnamon and bitter dark chocolate. It's well made with so many elements on show, but all well configured. A gourmet, dark chocolate bitterness lingers on the finish. Feels well made and purposeful. Dark, brooding and persistent. A great wine from an estate that's really improving.
